Ingredients

Hamburger Steak

  • 300 grams of minced beef
  • 100 grams of onion (half a medium sized onion)
  • 10 grams of butter
  • 1/4 tsp of salt
  • 1/2 tsp of black pepper
  • 1 egg
  • 1 tbsp of miso
  • 1 tbsp of japanese mayo
  • 4 tbsp of panko
  • 2 tbsp of water
  • 1/4 tsp of ajinomoto (MSG)
  • 2 tsp of cornstarch
  • 1/2 tsp of nutmeg
  • 1/2 tbsp of neutral oil
  • 3 tbsp of water

Sauce

  • 1 tbsp soy sauce
  • 1 tsp miso
  • 2 tbsp mirin
  • 2 tbsp sake
  • 1/2 tsp sugar
  • 1/4 tsp ajinomoto (MSG) optional

Instructions

Prepare Ingredients

  • Mince the 100 grams of onion (half a medium sized onion)

  • Melt the 10 grams of butter on a pan over medium heat.

Prepare the patties

  • Add 1 egg, 1 tbsp of miso, 1 tbsp of japanese mayo, 4 tbsp of panko, 2 tbsp of water, 1/4 tsp of ajinomoto (MSG), 2 tsp of cornstarch and 1/2 tsp of nutmeg to the bowl. Mix until combined. Add the cooked onions into the mixture and mix.
  • Take half of the beef mixture into your hands and shape into a oval shape. Toss the patty from one hand to the other a few times to release the air inside. This helps the patty not crack when it cooks.
  • Round out the sides and and add a small indent in the middle of the patties, this helps the meat to cook through in the centre.

Cook the patties

  • Turn the pan on medium heat and add 1/2 tbsp of neutral oil. You can use the same pan as the one used for the onions.
  • Place the patties on the pan. Cover the pan with a lid, cook for 2-3 minutes until brown.
  • Flip the patty to cook the other side for 2-3 minutes, until brown.
  • Add 3 tbsp of water in the pan and close again with a lid. Let it cook until water is mostly gone.
  • Turn the heat off, place the patties onto a plate.

Make the sauce

  • On the same pan, add 1 tbsp soy sauce, 1 tsp miso, 2 tbsp mirin, 2 tbsp sake, 1/2 tsp sugar, and 1/4 tsp ajinomoto (MSG). Turn the heat on medium low heat, mix lightly and bring to simmer.
  • Let the sauce simmer for 3-4 minutes. Mix every couple of minutes.
  • Turn the heat off and using a spoon, pour the sauce over the two patties.

Serve and enjoy!

  • This is a great dish to have with some Japanese rice and a light salad.
