Ingredients

  • 2 pieces Japanese bread (shokupan) If you can't find any then try to find a thick, soft white bread
  • 8 grams butter
  • 3 eggs
  • 2 tbsp Japanese mayonaise
  • 1 pinch of salt
  • ½ tsp of black pepper
  • ½ tsp Ajinomoto MSG optional
  • 1 tsp Japanese mustard 辛子 You can use dijon mustard!

Instructions

Boil Eggs

  • Add water in medium sized pot and turn heat on high. Once water is boiled, grab 3 eggs straight out of the fridge (this is important) and add them to the water one by one. Let it boil uncovered for 8 minutes.
  • Prepare a bowl with ice and water to place the eggs in after they are boiled. Once 8 minutes have passed, take the eggs out of the pot into the ice bowl.
  • Let the eggs cool and peel off the shell. Place the eggs in a bowl.

Make the filling

  • Melt 5g of butter however you'd like. Then add the butter into the bowl with the mayonnaise, a pinch of salt, black pepper, Ajinomoto and mustard. Mix until you get the texture you desire.

Make the sandwich

  • With the remaining butter, spread it on one side of each piece of bread.
  • Put the filling on one piece of bread and the other piece of bread on the filling.
  • Combine and enjoy! Tip: wrap the sandwich in plastic wrap to make it a cleaner cut.
